Ingredients
   
4 cups boiling water
4 cups cold water
8 teaspoons of Sencha tea leaves or Matcha (ceremonial or premium grade)
1 bunch of fresh mint
½ cup sugar (more/less to your desired taste)
½ cup freshly squeezed lime juice (approx 2-3 limes)
additional mint sprigs & lime slices for garnish
 

Instructions

  1. Make Sencha iced tea: In a saucepan, bring 4 cups of water to simmering over high heat. Once simmering, remove from heat.
  2. Add tea leaves and mint. Cover and let it steep for 10 minutes.
  3. Once steeped strain the tea into a large jug, add sugar and stir until dissolved.
  4. Pour in cold water, and then chill in the refrigerator, until ready to serve.
  1. Make Matcha iced tea: Boil 4 cups of water. Let the water sit for 5-7 minutes to allow the temperature of the water to drop (to about 70 degrees Celsius).
  2. Sift Matcha into a large glass jug, fill jug with approx. 1 cup of hot water. Whisk Matcha with Aerolatté 5-7 seconds. Once Matcha has melted, add the remaining hot water (3 cups) & mint. Cover and let it steep for 5 minutes
  3. Once steeped strain the tea into a large jug, add sugar and stir until dissolved.
  4. Pour in cold water, and then chill in the refrigerator until ready to serve.

To Serve

Remove jug from the refrigerator, stir in lime juice. Pour over ice cubes, garnish with mint and lime slices. Enjoy.
